I would say that the goal of fair trade is to pull disadvantaged citizens out of poverty. It aims to do this by asking a good price for the products that the fair trade producers make and also to ensure that most of the profits go to them with not too much to middlemen. Often the money goes to say farmer's co-ops to be shared by the co-op members.
