It is improvisation, that is spontaneous playing, without previous preparation and sheet music. It is the main feature and basis of jazz. It puts forward the musician's individualism, personal taste, sensibility, and skill.
Classical music, on the other hand, has strict orchestration and score. It also has some room for improvisation, but only at some points which the composer has specified, such as in cadenzas.
