Vitamins act as regulators of metabolic processes in the body, by facilitating or catalyzing various reactions that take place in the cells of the body. Insufficient quantities of specific vitamins in the body can detriment the proper occurrence of metabolic reactions and lead to diseases, called deficiency diseases. For example, a lack of vitamin C, a type of vitamin found in foods like citrus fruits (lemons, oranges, etc), can lead to a deficiency disease called scurvy, which is characterized by symptoms like bleeding gums.
- Fat-soluble vitamins are vitamins that dissolve in fats, but not water, and are stored in fat cells or liver in the body. For this reason, they are found in high quantities in fatty foods. It is recommended that these vitamins be consumed with dietary fats, like lard or oils, to facilitate their absorption into the body. They cannot be easily excreted from the body through urine, as they are not water-soluble, and thus there is a higher risk of problems from the overconsumption of these vitamins. Fat-soluble vitamins include the following four vitamins:

- Vitamin E
