If you've paid any attention to the media or social media recently, you've probably seen directed attacks on carbohydrates. They are regularly blamed for the obesity epidemic in the United States. As noted in the leture, most of the world gets most of their calories from carbohydrates. Furthermore, most of the world is not obese. This means that it is impossible to place the blame for obesity entirely on carbohydrates.
1. Why do you think carbohydrates are so villianized in the United States, when they are responsible for humans surviving to this point?
As countries become more developed and wealthier, dietary trends begin to shift to consume more animal protein. We've previously discussed that we expect the population to grow singificant in the next twenty years. This combination will result in animal protein becoming in more and more demand.
2. What are some of the consequences we may face in the future with a growing population and a growing demand for meat?
A small fraction of the water in the world is fresh, usable water. Animal protein requires high levels of water to produce calories.
3. Based on your previous answer, what can we do to deal with the inevatible water insecurity issues we may be facing?
